I am trying really hard to get back on track with some family meals this week. We have one more really busy week, and then things are winding down. I am hoping that we can find time to eat together every night this week despite our business. I actually broke out my white board this week and wrote our menu plan on it. Maybe if everyone sees it, I'll be accountable to stick to it.
B-Waffles (Forzen Eggos on sale at Food Lion- not homemade. I must cconfess because my daughter saw this on the menu, and said- "You're making waffles!!!!" Uh, no.)
L- Older kids at drama camp; sandwiches for Rachel and I.

Monday- Hamburgers; mac and cheese; fruit
- 1 1/2 pounds lean ground beef
- 1/2 onion, finely chopped
- 1/2 cup shredded Colby or Monterey Jack cheese
- 1 teaspoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 egg
- 1 (1 ounce) envelope dry onion soup mix
- 1 clove garlic, minced
- 1 tablespoon garlic powder
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed dried rosemary
- salt and pepper to taste
Directions
- Preheat a grill for high heat.
- In a large bowl, mix together the ground beef, onion, cheese, soy sauce, Worcestershire sauce, egg, onion soup mix, garlic, garlic powder, parsley, basil, oregano, rosemary, salt, and pepper. Form into 4 patties.
- Grill patties for 5 minutes per side on the hot grill, or until well done. Serve on buns with your favorite condiments.
Tuesday- Chicken and dumplings in the crockpot
Ingredients
- 4 skinless, boneless chicken breast halves
- 2 tablespoons butter
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 1 onion, finely diced
- 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
Directions
- Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
- Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.
Wednesday- Tator Tot Casserole
1 med. sized bag of tater tots
1 pkg. grated cheddar cheese
1 sm. onion
1 can cream of mushroom soup
1 to 2 lbs. hamburger
1 pkg. grated cheddar cheese
1 sm. onion
1 can cream of mushroom soup
1 to 2 lbs. hamburger
Brown hamburger with onion, drain. Add soup. Layer in casserole dish: tator tots, meat, cheese. Repeat as many times as needed. Top with tater tots and cheese. Bake at 350 degrees for 30 to 40 minutes.
Thursday- Feed the kids at Earth Fare (Kids eat free!)
Friday- Ravioli; salad; fruit
Weekend- Leftovers; Pizza
